Potentially Hazardous Foods Law and Legal Definition
Potentially hazardous foods mean any food that contains moisture, protein, and is in a form capable of supporting the rapid and accelerating growth of infectious or toxigenic microorganisms. Potentially hazardous foods can be either natural or man made, neutral or slightly acidic with a ph value between 4.6 and 7.5. The food safety organization uses this term to classify foods that require time and temperature control to keep them fit for human consumption.
