Safe temperatures as applied to potentially hazardous foods refers to the precise temperature at which the food must be kept to protect individuals from food borne illness. A safe temperature for potentially hazardous foods means internal temperatures of 41 degrees Fahrenheit or below for cold food and 140 degrees Fahrenheit or above for hot foods and 0 degrees Fahrenheit or below for frozen foods.
