Gabelle Law and Legal Definition
Gabelle refers to a very unpopular tax on salt in France before 1790. Gabelle was originally applied to taxes on all commodities, but was gradually limited to the tax on salt. The nobility, the clergy, and certain other privileged persons were exempted from this tax. This tax was one of the most hated and unequal taxes in France and was condemned by all supporters of reform.
